I personally love to eat food in decent quantity. I believe in moderation, but yet I often end up in situations like this: Eat bowl of cereal, finish box in 4 days. Then think, “Wow, that box was small.” Out of curiosity, I read the serving size before tossing the box. Oh…8 servings were supposed to be in there. oops.
The above scenario leads me to create recipes like this one. It’s healthy, filling and satisfies the taste craving for an unhealthier alternative => pizza. All this, so I can eat a heaping plate full with no regrets!
If you haven’t tried cauliflower rice, please, for my sake, TRY IT! It should absolutely be a new freezer staple. The texture is wonderful in this dish. No, it’s not going to be like a pizza crust, but it does make you feel like you’re eating carbs when it’s coated in this wonderfully meaty spiced tomato sauce.
Ingredients:
2 tsp olive oil
1 large onion or 2 small onions, chopped
1 green pepper, chopped
3 cloves garlic, minced
20 oz (1.25 lb) Sweet italian turkey sausage, casings removed if in links
8 oz mushrooms, chopped optional
12 oz (1 bag) frozen or fresh cauliflower rice
1 Tbsp italian seasoning
1 tsp dried oregano leaves
1 tsp dried basil
salt & pepper to taste
1/2 tsp red pepper flakes (more or less depending on spice preference)
1 4 oz can tomato paste
1 6 oz can tomato sauce
1/4 C water
3-4 roma tomatoes, chopped
3/4 C. shredded part-skim mozzarella cheese
For serving: grated parmesan, red pepper flakes
Directions
Preheat oven to 350 degrees.
Place olive oil in a deep dish, oven safe skillet on medium heat.
Add onions and green peppers to skillet, sautéing for 5 minutes. Add garlic and sauté for another minute.
Add turkey sausage to the skillet. Brown and break up into small pieces. When turkey is nearly fully cooked, add in mushrooms.
Drain oil if any remains in the skillet.
Add cauliflower rice and cook until rice is heated through. If frozen, this will take a couple minutes longer. Add in italian seasoning, oregano leaves, basil, salt and pepper and red pepper flakes to the skillet. Stir for 1-2 minutes.
Add tomato paste, tomato sauce, water and roma tomatoes. Once heated through, turn off the heat and sprinkle the mozzarella cheese on top. Transfer skillet to oven and bake for 15-20 minutes until cheese is melted.
