Please tell me you don’t let the raw eggs in cookie dough stop you from licking the bowl.
I know there’s research that says it’s not good for you, yet it’s one of those things I still won’t get behind. Some of my favorite memories in the kitchen growing up include baking Christmas cookies with flour on our noses and eating cookie dough while we rolled out each batch.
Keep eating dough if you want–I support you. However, if you’re either:
1. Nervous about eating raw eggs OR
2. Wanting a healthier option that fills your cookie dough craving
THEN THIS IS YOUR RECIPE.
I make this almost weekly and love, love, love my Ninja food processor. Believe me, if you don’t have a Ninja in the kitchen, you’re going to want one. Especially with sneaky recipes like this where you need to break down a secret ingredient, a good food processor is an absolute necessity from a texture standpoint. I cannot wait to see if you become as addicted as I am to this recipe!
Ingredients:
1 can (15.5 oz) white beans/ or cannellini beans, rinsed
1 Tbsp honey or maple syrup
1/3 C natural peanut butter
1 Tbsp vanilla extract (yes, TABLESPOON)
1/2 C quick oats (adjust according to the texture you desire–I like a thicker dough)
1/4 C mini semi-sweet or dark chocolate chips (adjust to your taste)
Directions
Place beans, honey or maple syrup, peanut butter and vanilla in a food processor. (I highly recommend the Ninja linked here.) Process on high until mixture is completely smooth and no lumps remain.
Once smooth, scrape down sides, take the bowl off of the processor and the blade out of the bowl. Add the oats and chocolate chips and mix with a spatula.
Place the dough in a bowl to refrigerate… or eat right away!
Notes:
I do not recommend trying a blender in place of a food processor. There’s not enough liquid in this recipe to properly blend in a blender.
Garbanzo beans can also be used, but require the skins to be gently peeled off before adding to the processor. I’ve also found that white beans have a less “beany” flavor.
