You wouldn’t know it now with my love (and NEED) for breakfast, but there used to be a time when all I could be convinced to eat for breakfast before I’d leave for elementary school was a packaged rice krispie treat.
Maybe the sugar jolt was my elementary form of caffeine?
Back to these breakfast burritos. When it’s busy season on the farm, it can be tough to get your farmer to eat anything, let alone stop right away in the morning to eat breakfast–the most important meal of the day.
Good thing these burritos are prepped ahead of time to make them easy to grab out of the freezer, zap in the microwave and eat on the go!
They’re going to go fast so you might want to go ahead and make a double batch…
Ingredients:
Sausage & Pepper Filling Ingredients:
2 tsp. olive oil
1 medium yellow or red onion, chopped small
2 red or orange bell peppers, chopped small
1 lb. turkey (or pork) breakfast sausage
red pepper flakes (optional)
Scrambled Eggs:
2 tsp. olive oil
1 doz eggs
1/4 C milk
salt & pepper, to taste
Other Ingredients:
8 whole wheat tortillas
Salsa
Sharp cheddar or Mexican cheese
Paper towels & foil for wrapping
Directions:
Place olive oil in a nonstick skillet on the stove on medium heat. Add onions & peppers and sauté until soft (about 5 minutes).
Add sausage to the skillet with the onions and peppers and brown, breaking up the sausage into small pieces. Add red pepper flakes for some spice, if desired. Set aside to cool once the sausage is browned, making sure to drain any excess grease or liquid from the pan.
Add olive oil to another skillet and bring to low heat. In a separate bowl, whisk the eggs, milk, salt & pepper. Add egg mixture to the skillet and scramble. Remove from heat and allow to cool once scrambled.
Set up an assembly line in the following order: tortillas, cheese, sausage mixture, eggs, salsa. (Note: the sausage and egg mixture will be evenly distributed among the 8 tortillas–you can eyeball this as you assemble, it’s not an exact science.)
Once all elements are cooled to room temperature, begin assembling the burritos. Layer cheese, sausage mixture, eggs & 1/2 to 1 Tbsp. of salsa in the center of the tortilla. Fold in the sides of the tortilla and roll into a burrito.
To store in the freezer, first wrap the burrito with a full sheet of paper towel, then wrap with a sheet of aluminum foil. Place wrapped burritos in a labeled, plastic gallon freezer bag. When ready to eat, remove the foil and place the paper towel wrapped burrito on a plate in the microwave. Microwave until heated through (approximately 2-3 minutes). Remove the paper towel and enjoy!
