You GUYS. Prepare for a flavor explosion.
It’s also a health food masterpiece–but no one seems to notice that when it’s this delicious. 🙂
When I first found this mole sauce, I made it with standard chicken enchiladas. That was delicious, so I kept hoping I’d find more ways to use the sauce.
Fast forward to a few weeks ago when I was brainstorming recipe ideas…
I realized the chicken enchilada stuffed pepper recipe I had been working on perfecting was missing something…
…MOLE. Ah hah! It was missing the deep flavors of this mole sauce.
Believe me, the extra effort that goes into the mole is WORTH IT IN EVERY WAY.
Ingredients:
1 batch holy mole sauce from Gimme Some Oven
3 multi-colored bell peppers (red, orange, yellow)
FILLING:
1 lb. chicken breasts, cooked & shredded (use rotisserie chicken for a time saver!)
1 15 oz. can black beans, rinsed & drained
1 C. frozen corn or fresh cooked sweet corn, cut off the cob
1 4 oz. can green chilis
1/2 C. cilantro, chopped
1/2 C. mole sauce
1/2 – 3/4 C. shredded mexican blend or cheddar cheese
Avocado & cilantro for serving, optional
Directions:
Make mole sauce according to recipe. (Her recipe mentions to use an immersion blender. If you don’t have one of those (like me), I just transfer it to my ninja blender and it works great!
Pre-heat oven to 375 degrees F. Spray a 9×13 glass baking dish with cooking spray.
Slice the peppers in half LENGTHWISE. Remove the seeds and ribs. Lay the peppers, cut side up, in the baking dish.
In a bowl, mix the filling ingredients together: chicken, black beans, corn, green chilis, cilantro and 1/2 C. of mole sauce. Mix until incorporated evenly.
Scoop the filling evenly into the peppers. Piling them up with filling is ok–they shouldn’t spill over.
Pour the mole sauce over the tops and outside/around the peppers in the baking dish.
Sprinkle the cheese over the top of the filled peppers.
Cover the baking dish with aluminum foil and bake for 30-35 minutes, or until the peppers have softened.
Serve with fresh sliced avocado and cilantro!
