You know when you go to a restaurant and have a meal you can’t stop thinking about?
That’s how this salmon recipe came about. I had a blackened salmon salad at a restaurant and now any time I go back there I can’t order anything but that salad.
Considering I don’t eat there often, I needed to replicate the salmon so I could have more frequently…like every week. 🙂
This rub is a perfect balance of heat and sweet. The spice from the red pepper flakes and the smokey, bold flavor from the smoked paprika pairs perfectly with the caramelized brown sugar. Go, do yourself a favor and make this for supper!
Ingredients:
1/4 C light brown sugar
2 Tbsp smoked paprika
1 1/2 tsp oregano leaves
1 tsp onion powder
1 tsp crushed red pepper flakes (alter based on your heat preference)
1/2 tsp garlic salt
freshly ground black pepper, to taste
Directions:
Mix all ingredients in a small bowl until evenly distributed.
Use the spice rub on salmon or other fish. First, coat the fillets in olive oil, then rub liberally with the spice rub*. Bake fish until it reaches the suggested internal temperature.
Directions for the salmon pictured:
Pre-heat oven to 425 degrees Fahrenheit. Place the fillets (1.25 lbs) skin side down on a sheet pan lined with foil and sprayed with cooking spray. Coat the top side of the salmon liberally with olive oil and sprinkle enough of the rub mixture to evenly coat the top. Bake until the salmon is cooked through and flakes easily (approx. 15-20 minutes).
